- 2 pounds medium-sized potatoes (Yukon Gold or red)
- 4 tablespoons olive oil
- 1 medium onion, diced
- 2 bell peppers (1 red, 1 green), chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cube the potatoes into bite-sized pieces.
- In a large bowl, combine potatoes, olive oil, onion, bell peppers, garlic, cumin, chili powder, paprika, salt, and pepper.
- Toss everything together until the potatoes are well coated.
- Spread the mixture evenly on a baking sheet.
- Roast in the oven for 30-35 minutes, stirring halfway through.
- Check for doneness; the potatoes should be golden and crispy.
- Remove from oven and let cool slightly before serving.
