Ingredients

  • 2 pounds medium-sized potatoes (Yukon Gold or red)
  • 4 tablespoons olive oil
  • 1 medium onion, diced
  • 2 bell peppers (1 red, 1 green), chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cube the potatoes into bite-sized pieces.
  3. In a large bowl, combine potatoes, olive oil, onion, bell peppers, garlic, cumin, chili powder, paprika, salt, and pepper.
  4. Toss everything together until the potatoes are well coated.
  5. Spread the mixture evenly on a baking sheet.
  6. Roast in the oven for 30-35 minutes, stirring halfway through.
  7. Check for doneness; the potatoes should be golden and crispy.
  8. Remove from oven and let cool slightly before serving.
