Delicious mini pumpkin muffins with a cinnamon sugar coating.
Ingredients

- 1 3/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground allspice
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 4 tbsp unsalted butter, melted and slightly cooled
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg, at room temperature
- 1 cup canned pumpkin puree
- 1/2 cup milk, at room temperature
- 4 tbsp unsalted butter, melted
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 375°F (190°C). Grease a mini muffin pan.
- In a bowl, whisk flour, baking powder, cinnamon, ginger, allspice, nutmeg, cloves, and salt.
- In another bowl, mix melted butter, brown sugar, granulated sugar, egg, pumpkin puree, and milk.
- Combine wet and dry ingredients until just mixed.
- Fill muffin cups 3/4 full. Bake for 12-15 minutes.
- Cool muffins slightly, then dip tops in melted butter and roll in cinnamon sugar.
Notes
- Use room temperature ingredients for best results.
- Do not overmix the batter.
- Store in an airtight container for up to 3 days.
