- 1/2 cup unsalted butter (melted)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup brewed espresso or strong coffee (cooled)
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/2 cup chocolate chips
- 1/4 cup chopped walnuts or pecans (optional)
- Optional: 1/4 tsp cinnamon (pinch of chili powder, flaky sea salt for topping)
Instructions
- Preheat oven to 350°F and grease or line a mini muffin tin.
- Whisk melted butter and sugar until glossy. Add eggs, vanilla, and espresso.
- Stir in cocoa, flour, and salt until just combined.
- Fold in chocolate chips and nuts.
- Fill muffin cups 3/4 full and bake 12–15 minutes.
- Cool 5 minutes in pan, then transfer to wire rack.
