This whimsical No-Bake Funfetti Oreo Icebox Cake features layers of cookies, creamy Funfetti-flavored filling, and rainbow sprinkles. No oven needed and always a hit at parties!

- 24 Funfetti Oreos (or regular Oreos)
- 2 cups heavy whipping cream
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 1 package (8 oz cream cheese, softened)
- 1 cup Funfetti cake mix (dry)
- ½ cup whole milk
- ½ cup rainbow sprinkles (plus extra for topping)
- 1 cup mini marshmallows (optional)
Instructions
- Whip cream, sugar, and vanilla to stiff peaks; set aside.
- Beat cream cheese, add dry cake mix and milk, mix until smooth.
- Fold in whipped cream gently to create fluffy filling.
- Layer Oreos and cream in an 8x8 dish, repeat layers.
- Top with sprinkles and marshmallows.
- Cover and refrigerate 4–8 hours or overnight.
- Slice and serve chilled.
