  • 2 cups whole milk
  • 3 egg yolks (reserve the whites for meringue)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 egg whites
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar
  • ¼ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt the butter over medium heat.
  3. Stir in the sugar, flour, cocoa powder, and salt.
  4. Add the milk gradually, whisking to combine.
  5. Cook until thickened, stirring constantly.
  6. Remove from heat and whisk in the egg yolks and vanilla.
  7. Pour the chocolate filling into the pre-baked pie crust.
  8. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
  9. Gradually add the sugar, continuing to beat until stiff peaks form.
  10. Spread the meringue over the chocolate filling, sealing the edges.
  11. Bake for 10-12 minutes until the meringue is golden.
  12. Let cool before serving.
