Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables
  • Chopped green onions or parsley (optional, for garnish)

Instructions

  1. In a large pan, heat oil over medium heat.
  2. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Add chicken to the pan and cook until browned on both sides.
  4. Remove chicken and set aside.
  5. Add rice to the pan, stirring for 1-2 minutes.
  6. Pour in chicken broth, BBQ sauce, and honey. Stir well.
  7. Return chicken to the pan, nestling it into the rice mixture.
  8. Add mixed vegetables on top.
  9. Cover and simmer for 20-25 minutes or until rice is cooked.
  10. Garnish with green onions or parsley before serving.
