Ingredients

- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables
- Chopped green onions or parsley (optional, for garnish)
Instructions
- In a large pan, heat oil over medium heat.
- Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Add chicken to the pan and cook until browned on both sides.
- Remove chicken and set aside.
- Add rice to the pan, stirring for 1-2 minutes.
- Pour in chicken broth, BBQ sauce, and honey. Stir well.
- Return chicken to the pan, nestling it into the rice mixture.
- Add mixed vegetables on top.
- Cover and simmer for 20-25 minutes or until rice is cooked.
- Garnish with green onions or parsley before serving.

- Adjust the sweetness by varying the amount of honey.
- Use your favorite BBQ sauce for different flavor profiles.
