Description

A simple and healthy dish featuring a mix of vibrant Greek vegetables.


Ingredients

  • 2 cups chopped bell peppers (mixed colors)
  • 1 large zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives
  • 3 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup crumbled feta cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the bell peppers, zucchini, red onion, cherry tomatoes, and Kalamata olives.
  3. Drizzle olive oil over the vegetables.
  4. Add oregano, garlic powder, salt, and black pepper.
  5. Toss everything until well coated.
  6. Spread the mixture evenly on a baking sheet.
  7. Bake for 25-30 minutes until vegetables are tender.
  8. If using, sprinkle crumbled feta cheese on top before serving.
