Ingredients

- 2 cups chopped bell peppers (mixed colors)
- 1 large zucchini, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- ½ cup Kalamata olives
- 3 tbsp olive oil
- 1 tbsp dried oregano
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup crumbled feta cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the bell peppers, zucchini, red onion, cherry tomatoes, and Kalamata olives.
- Drizzle olive oil over the vegetables.
- Add oregano, garlic powder, salt, and black pepper.
- Toss everything until well coated.
- Spread the mixture evenly on a baking sheet.
- Bake for 25-30 minutes until vegetables are tender.
- If using, sprinkle crumbled feta cheese on top before serving.

- Serve warm as a side dish or over grains.
- Leftovers can be stored in the fridge for up to 3 days.
