One-Pot Cheesy Southwest Chicken & Rice is a flavorful, easy-to-make dish packed with protein, cheese, and spices.


Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup long-grain white rice, rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups chicken broth
  • 1 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in onion, bell pepper, and garlic, cooking until softened.
  4. Add rice, black beans, corn, chicken broth, salsa, chili powder, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat and cover.
  6. Simmer for 20 minutes or until rice is cooked.
  7. Stir in cream cheese and cheddar until melted and combined.

Notes

  • You can substitute chicken with turkey or tofu for a different protein.
