Description

A hearty and comforting one-pot lasagna soup with all the flavors of traditional lasagna.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 cups chicken or beef broth
  • 1 jar (24 oz) marinara or pasta sauce
  • 2 cups water
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup heavy cream or half-and-half
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Brown the ground beef or sausage in a large pot over medium heat.
  2. Add diced onion and minced garlic, sauté until softened.
  3. Stir in Italian seasoning and red pepper flakes.
  4. Pour in broth, marinara sauce, and water. Bring to a simmer.
  5. Add broken lasagna noodles and cook until tender.
  6. Stir in heavy cream or half-and-half.
  7. Top with mozzarella and Parmesan cheese before serving.
  8. Garnish with fresh basil or parsley.
