A hearty and flavorful one-pot soup featuring sausage, kale, and potatoes for a comforting meal.


Ingredients

Scale
  • 1 T oil
  • 24 oz kielbasa sausage, sliced into rounds
  • 1 medium yellow onion, small diced
  • 1 stalk celery, small diced
  • 1 carrot, small diced
  • 6 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 2 tsp Italian seasoning
  • 1½ tsp salt
  • ¼ tsp black pepper
  • 15 oz fire roasted tomatoes
  • 4 Yukon gold potatoes, diced
  • 64 oz chicken broth
  • 4 cups kale or spinach
  • 1½ cups half and half, room temperature
  • fresh shredded parmesan, for serving
  • chopped parsley, for serving

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add sausage and cook until browned.
  3. Add onion, celery, carrot, and garlic. Cook until softened.
  4. Stir in red pepper flakes, Italian seasoning, salt, and black pepper.
  5. Add fire roasted tomatoes, potatoes, and chicken broth. Bring to a boil.
  6. Reduce heat and simmer until potatoes are tender.
  7. Add kale or spinach and cook until wilted.
  8. Stir in half and half and heat through.
  9. Serve topped with parmesan and parsley.

Notes

  • Use fresh kale for best texture.
  • Adjust seasoning to taste.
  • Store leftovers in the fridge for up to 3 days.
