- 1 tablespoon olive oil
- 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup basmati rice, rinsed and drained
- 2 cups chicken broth
- 1/4 cup parsley, chopped, for garnish
- Lemon wedges, for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken thighs and season with cumin, coriander, paprika, turmeric, cinnamon, cayenne, salt, and pepper. Cook until browned.
- Add onion and garlic. Sauté until onion is translucent.
- Add rice and stir to coat with the spices.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 18-20 minutes, or until rice is cooked.
- Remove from heat and let it sit for 5 minutes, covered.
- Fluff rice with a fork and garnish with parsley.
- Serve with lemon wedges.

- Use bone-in chicken for more flavor if preferred.
