One Pot Shawarma Chicken And Rice is a flavorful dish combining tender chicken thighs and aromatic spices with rice, all cooked in one pot for easy cleanup.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup basmati rice, rinsed and drained
  • 2 cups chicken broth
  • 1/4 cup parsley, chopped, for garnish
  • Lemon wedges, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken thighs and season with cumin, coriander, paprika, turmeric, cinnamon, cayenne, salt, and pepper. Cook until browned.
  3. Add onion and garlic. Sauté until onion is translucent.
  4. Add rice and stir to coat with the spices.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 18-20 minutes, or until rice is cooked.
  7. Remove from heat and let it sit for 5 minutes, covered.
  8. Fluff rice with a fork and garnish with parsley.
  9. Serve with lemon wedges.

  • Adjust cayenne pepper for desired spice level.
  • Use bone-in chicken for more flavor if preferred.
