Crispy oven-baked beef taquitos filled with seasoned ground beef and cheese, served with salsa, guacamole, and sour cream.

- 1 lb ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 10 small corn tortillas
- Olive oil spray or brush-on olive oil
- Salsa, guacamole, and sour cream for serving
Instructions
- Preheat oven to 425°F (220°C).
- Cook ground beef in a skillet over medium heat until browned.
- Add diced onion, minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 3-5 minutes.
- Remove from heat and stir in shredded cheddar cheese.
- Warm tortillas in the microwave for 20-30 seconds to make them pliable.
- Spoon the beef mixture onto each tortilla and roll tightly.
- Place taquitos seam-side down on a baking sheet. Lightly spray or brush with olive oil.
- Bake for 15-20 minutes until crispy and golden brown.
- Serve with salsa, guacamole, and sour cream.
Notes
- Use fresh tortillas for easier rolling.
- Adjust spices to taste.
- Store leftovers in an airtight container for up to 3 days.
