Delicious individual mini cakes featuring juicy peaches and a caramelized topping.
Ingredients

- 2 large ripe peaches, peeled and sliced
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin or mini cake pan.
- In a bowl, mix melted butter and brown sugar until combined.
- Pour the mixture into the bottom of the prepared pan.
- Arrange peach slices on top of the sugar mixture.
- In another bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In a separate bowl, combine milk, vanilla extract, and egg.
- Mix the wet ingredients into the dry ingredients until just combined.
- Pour the batter over the peaches in the pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before inverting onto a plate.

- Use ripe peaches for the best flavor.
- These mini cakes can be served warm or at room temperature.
