Description

Delicious individual mini cakes featuring juicy peaches and a caramelized topping.


Ingredients

  • 2 large ripe peaches, peeled and sliced
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin or mini cake pan.
  3. In a bowl, mix melted butter and brown sugar until combined.
  4. Pour the mixture into the bottom of the prepared pan.
  5. Arrange peach slices on top of the sugar mixture.
  6. In another bowl, whisk together flour, granulated sugar, baking powder, and salt.
  7. In a separate bowl, combine milk, vanilla extract, and egg.
  8. Mix the wet ingredients into the dry ingredients until just combined.
  9. Pour the batter over the peaches in the pan.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Let cool for a few minutes before inverting onto a plate.
