Description

Ingredients

  • 1/4 cup brown sugar, packed
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 1/2 cups flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup seedless jam
  • More jam, to top baked cookies
  • Melted peanut butter, to garnish
  • Chopped peanuts, to garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream butter, granulated sugar, and brown sugar until smooth.
  3. Add peanut butter, egg, and vanilla. Mix well.
  4. In a separate bowl, whisk flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients. Mix until combined.
  6. Roll dough into balls and place on a baking sheet.
  7. Press a thumbprint into each cookie and fill with jam.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Let cool, then drizzle with melted peanut butter and sprinkle with chopped peanuts.
