Description

A delicious chocolate roll filled with peanut butter and topped with chocolate ganache.


Ingredients

Scale
  • ¾ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 4 large eggs at room temperature
  • ¾ cup granulated sugar
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • ¼ cup milk
  • ¾ cup creamy peanut butter
  • ½ cup powdered sugar
  • ½ cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup chopped peanut butter cups
  • ½ cup heavy cream for ganache
  • ¾ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a baking sheet and line with parchment paper.
  3. In a bowl, mix flour, cocoa powder, baking powder, and salt.
  4. In another bowl, beat eggs and sugar until light and fluffy.
  5. Add oil, vanilla, and milk to egg mixture. Mix well.
  6. Gradually add dry ingredients to wet ingredients. Mix until combined.
  7. Pour batter into prepared baking sheet. Spread evenly.
  8. Bake for 15-20 minutes or until a toothpick comes out clean.
  9. Remove from oven and let cool.
  10. For the filling, beat peanut butter, powdered sugar, heavy cream, and vanilla until smooth.
  11. Spread filling over cooled cake. Sprinkle chopped peanut butter cups on top.
  12. Roll the cake tightly. Wrap in plastic wrap and refrigerate.
  13. For the ganache, heat heavy cream until simmering. Pour over chocolate chips. Stir until smooth.
  14. Remove roll from fridge and drizzle with ganache.

Notes

  • Store in the refrigerator.
  • Can be made a day in advance.
  • Use any type of chocolate chips for ganache.
