Healthy Peanut Butter Greek Yogurt Breakfast Blondies

Ingredients

  • ½ cup peanut butter
  • ⅓ cup Greek yogurt
  • ¼ cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • ½ teaspoon baking soda
  • ¼ teaspoon cinnamon
  • ¼ cup mini chocolate chips (optional)

Instructions

Preheat and Prepare

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8x8-inch baking dish with parchment paper or lightly grease it.

Mix the Wet Ingredients

  1. In a medium bowl, whisk together the peanut butter, Greek yogurt, honey or maple syrup, egg, and vanilla extract until smooth.

Add the Dry Ingredients

  1. Add the oat flour, baking soda, and cinnamon to the bowl.
  2. Stir until just combined—don’t overmix.

Fold in Add-Ins

  1. Gently fold in mini chocolate chips or any other add-ins like chopped nuts or raisins.

Bake the Blondies

  1. Spread the batter evenly in the prepared pan.
  2. Bake for 18–22 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  3. Let cool completely in the pan before slicing into bars.

Notes

  • Nut-free? Use sunflower seed butter instead of peanut butter.
  • No oat flour? Blend rolled oats in a blender until fine.
  • Vegan version? Use a flax egg and maple syrup instead of honey.
  • Add a drizzle of melted chocolate or a dollop of whipped cream for a healthier treat.
