A delicious pecan upside-down cake with a caramelized pecan topping.
Ingredients

- 1 yellow cake mix
- 1 pack instant vanilla pudding
- 3 eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1 stick butter (melted)
- 1 cup light brown sugar
- 1 cup pecans
- Non-stick baking spray
Instructions
- Preheat your oven to 350°F (175°C).
- Spray a baking pan with non-stick baking spray.
- Mix the melted butter and brown sugar, then spread evenly in the pan.
- Arrange pecans on top of the butter-sugar mixture.
- In a bowl, combine cake mix, pudding mix, eggs, oil, and water.
- Pour the batter over the pecans.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes, then invert onto a serving plate.
Notes
- Let the cake cool slightly before inverting to prevent sticking.
- Use fresh pecans for the best flavor.
