- 2/3 cup (55g) natural unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/2 cup (1 stick; 120g) unsalted butter softened to room temperature
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) light brown sugar packed
- 1 large egg at room temperature
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 tablespoon (15ml) milk
- 1 (3.5 ounce) semi-sweet chocolate bar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, cocoa powder, baking soda, and salt.
- In another bowl, beat butter, granulated sugar, and brown sugar until creamy.
- Add egg, vanilla extract, and peppermint extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Stir in milk until the dough is smooth.
- Chop the chocolate bar and fold it into the dough.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until cookies are set.
- Let cool before serving.
Notes
- Store cookies in an airtight container.
- For a more intense peppermint flavor, increase peppermint extract to taste.
- Allow cookies to cool completely before stacking.
