Ingredients

- 2 cups jasmine rice
- 1 tablespoon vegetable oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 cup fresh pineapple chunks (or canned, drained)
- 1 small red bell pepper, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1/2 teaspoon crushed red pepper flakes (optional)
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Cook jasmine rice according to package instructions.
- In a large skillet, heat vegetable oil over medium heat.
- Add diced chicken and cook until browned.
- Stir in onion, garlic, and red bell pepper. Cook until softened.
- Add pineapple, soy sauce, honey, rice vinegar, and red pepper flakes. Mix well.
- Simmer for 5-7 minutes until chicken is cooked through.
- Serve over cooked rice and garnish with green onions.
Notes
- Adjust sweetness by varying honey amount.
- Use fresh pineapple for a brighter flavor.
- Serve with extra soy sauce on the side if desired.
