Description

A tropical dish featuring tender chicken, sweet pineapple, and fragrant rice.


Ingredients

  • 2 cups jasmine rice
  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1 small red bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Cook jasmine rice according to package instructions.
  2. In a large skillet, heat vegetable oil over medium heat.
  3. Add diced chicken and cook until browned.
  4. Stir in onion, garlic, and red bell pepper. Cook until softened.
  5. Add pineapple, soy sauce, honey, rice vinegar, and red pepper flakes. Mix well.
  6. Simmer for 5-7 minutes until chicken is cooked through.
  7. Serve over cooked rice and garnish with green onions.

Notes

  • Adjust sweetness by varying honey amount.
  • Use fresh pineapple for a brighter flavor.
  • Serve with extra soy sauce on the side if desired.
