Description

Pineapple fritters are a delightful treat made with fresh pineapple and a sweet batter, fried to a golden crisp.


Ingredients

  • 1 cup All-purpose flour (Gluten-free flour can be used)
  • 1/4 cup Granulated sugar (Coconut sugar can be used for a less refined option)
  • 1 tablespoon Baking powder (Avoid substituting directly with baking soda)
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg (Can substitute with a flax egg for vegan option)
  • 1/2 cup Milk (Dairy-free milk can be used)
  • 1 whole Fresh pineapple (Sliced into rings)
  • 2 cups Vegetable oil (Canola or coconut oil can be used for frying)
  • 1 tablespoon Additional cinnamon and sugar (Adjust mixture to liking for dusting)

Instructions

  1. In a bowl, mix flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, whisk the egg and milk together.
  3. Combine the wet and dry ingredients until smooth.
  4. Heat oil in a deep pan over medium heat.
  5. Dip pineapple rings in the batter.
  6. Fry the battered pineapple rings until golden brown.
  7. Remove and place on paper towels to drain excess oil.
  8. Dust with cinnamon and sugar mixture before serving.
