A delicious sweet potato casserole with a sweet and crunchy topping.
Ingredients

- 4 cups peeled, cubed sweet potatoes
- 2 large eggs, beaten
- ½ cup white sugar
- ½ cup milk
- 4 tablespoons butter, softened
- ½ teaspoon vanilla extract
- ½ teaspoon salt
- Topping:
- ½ cup brown sugar
- ⅓ cup all-purpose flour
- 3 tablespoons butter, softened
- ½ cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- Boil sweet potatoes until tender, about 20 minutes.
- Drain and mash the sweet potatoes in a bowl.
- Mix in eggs, white sugar, milk, butter, vanilla extract, and salt.
- Spread the mixture into a greased baking dish.
- In another bowl, combine brown sugar, flour, butter, and pecans for the topping.
- Spread the topping over the sweet potato mixture.
- Bake for 30 to 35 minutes until golden brown.

- Serve warm for best flavor.
- You can prepare the sweet potatoes a day in advance.
