Description

A delicious sweet potato casserole with a sweet and crunchy topping.


Ingredients

  • 4 cups peeled, cubed sweet potatoes
  • 2 large eggs, beaten
  • ½ cup white sugar
  • ½ cup milk
  • 4 tablespoons butter, softened
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt
  • Topping:
  • ½ cup brown sugar
  • ⅓ cup all-purpose flour
  • 3 tablespoons butter, softened
  • ½ cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes until tender, about 20 minutes.
  3. Drain and mash the sweet potatoes in a bowl.
  4. Mix in eggs, white sugar, milk, butter, vanilla extract, and salt.
  5. Spread the mixture into a greased baking dish.
  6. In another bowl, combine brown sugar, flour, butter, and pecans for the topping.
  7. Spread the topping over the sweet potato mixture.
  8. Bake for 30 to 35 minutes until golden brown.
