Description

A hearty and flavorful soup that combines the classic tastes of pizza in a comforting bowl.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 garlic cloves, finely diced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried marjoram
  • 1 can (14 oz / 400g) crushed tomatoes
  • 1 cup tomato sauce
  • 1 teaspoon sugar
  • 4 oz pepperoni, quartered
  • 4 cups chicken stock
  • 6-8 fresh basil leaves
  • 4 oz mozzarella cheese, grated
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add Italian sausage and cook until browned, breaking it into small pieces.
  3. Stir in onion, bell pepper, and garlic. Cook until softened.
  4. Add oregano, basil, and marjoram. Cook for 1 minute.
  5. Pour in crushed tomatoes, tomato sauce, sugar, and chicken stock. Bring to a boil.
  6. Reduce heat and simmer for 15-20 minutes.
  7. Add pepperoni and fresh basil. Simmer for 5 more minutes.
  8. Season with salt and black pepper to taste.
  9. Serve hot, topped with grated mozzarella.

Notes

  • Use spicy Italian sausage for extra heat.
  • Substitute vegetable stock for chicken stock to make it vegetarian.
  • Store leftovers in the refrigerator for up to 3 days.
