A hearty and flavorful soup that combines the classic tastes of pizza in a comforting bowl.
Ingredients

- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 1 medium green bell pepper, diced
- 2 garlic cloves, finely diced
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon dried marjoram
- 1 can (14 oz / 400g) crushed tomatoes
- 1 cup tomato sauce
- 1 teaspoon sugar
- 4 oz pepperoni, quartered
- 4 cups chicken stock
- 6-8 fresh basil leaves
- 4 oz mozzarella cheese, grated
- Salt and freshly ground black pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add Italian sausage and cook until browned, breaking it into small pieces.
- Stir in onion, bell pepper, and garlic. Cook until softened.
- Add oregano, basil, and marjoram. Cook for 1 minute.
- Pour in crushed tomatoes, tomato sauce, sugar, and chicken stock. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes.
- Add pepperoni and fresh basil. Simmer for 5 more minutes.
- Season with salt and black pepper to taste.
- Serve hot, topped with grated mozzarella.
Notes
- Use spicy Italian sausage for extra heat.
- Substitute vegetable stock for chicken stock to make it vegetarian.
- Store leftovers in the refrigerator for up to 3 days.
