Ingredients

- 1 medium banana, mashed
- 1 large egg, at room temperature
- ½ cup cottage cheese, fresh, room temperature
- ¼ cup milk, any type
- 1-2 tablespoons maple syrup or honey, for sweetness
- 1 teaspoon vanilla extract, optional
- ½ cup rolled oats
- 1 scoop protein powder, any flavor
- 1 teaspoon baking powder
- ¼ teaspoon salt
Instructions
- In a bowl, mash the banana.
- Add the egg, cottage cheese, milk, maple syrup, and vanilla extract. Mix well.
- Stir in the rolled oats, protein powder, baking powder, and salt until combined.
- Heat a non-stick skillet over medium heat.
- Pour the batter into the skillet, forming small pancakes.
- Cook for 2-3 minutes on each side or until golden brown.
- Serve warm in a bowl and top as desired.

- Adjust sweetness to your preference.
- You can add fruits or nuts as toppings.
