Description

Ingredients

  • 3/4 cup granulated sugar

  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • zest of 1/2 lemon
  • 3/4 cup all purpose flour
  • 3/4-1 cup fresh raspberries
  • Glaze:
  • 1 cup powdered sugar
  • 1 tbsp seedless raspberry jam
  • 1 tbsp lemon juice
  • zest of 1/2 lemon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until smooth.
  3. Add eggs, lemon juice, salt, and lemon zest. Mix well.
  4. Stir in the flour until just combined.
  5. Fold in fresh raspberries gently.
  6. Pour the batter into a greased baking dish.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the bars cool completely.
  9. For the glaze, mix powdered sugar, raspberry jam, lemon juice, and zest until smooth.
  10. Spread the glaze over the cooled bars and cut into squares.
