- zest of 1/2 lemon
- 3/4 cup all purpose flour
- 3/4-1 cup fresh raspberries
- Glaze:
- 1 cup powdered sugar
- 1 tbsp seedless raspberry jam
- 1 tbsp lemon juice
- zest of 1/2 lemon
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until smooth.
- Add eggs, lemon juice, salt, and lemon zest. Mix well.
- Stir in the flour until just combined.
- Fold in fresh raspberries gently.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the bars cool completely.
- For the glaze, mix powdered sugar, raspberry jam, lemon juice, and zest until smooth.
- Spread the glaze over the cooled bars and cut into squares.
