Description

Raspberry Swirl Shortbread Cookies are a delightful treat combining buttery shortbread with a tangy raspberry swirl.


Ingredients

  • 2/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam or preserves
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add vanilla extract and mix well.
  4. Gradually add the flour and salt, mixing until combined.
  5. In a separate bowl, combine raspberry jam, lemon juice, and vanilla extract to make the swirl.
  6. Spread the shortbread dough onto a baking sheet lined with parchment paper.
  7. Spoon the raspberry mixture over the dough and swirl it with a knife.
  8. Bake for 20-25 minutes, or until the edges are lightly golden.
  9. Allow to cool and dust with powdered sugar before serving.
