- 4 boneless (skinless chicken breasts (cooked and shredded))
- Salt and pepper (to taste)
- 1 sleeve Ritz crackers (crushed)
- 1/2 cup grated Parmesan cheese
- 1/2 cup unsalted butter (melted)
- 1 cup sour cream
- 1 can (10.5 oz cream of chicken soup)
- 1/2 cup chicken broth
- 1 tbsp fresh parsley (chopped (optional))
- Optional: 1/2 cup frozen peas (corn, or diced carrots)
- Optional: 1 tsp garlic powder or onion powder
Instructions
- Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- Season chicken with salt and pepper, then cook and shred.
- In a bowl, combine sour cream, cream of chicken soup, and chicken broth.
- Stir in shredded chicken and any optional vegetables or seasonings.
- Spread mixture into prepared baking dish.
- In a separate bowl, mix crushed Ritz crackers, Parmesan cheese, and melted butter.
- Sprinkle cracker topping evenly over the casserole.
- Bake uncovered for 30–35 minutes, until golden and bubbly.
- Let rest for 5–10 minutes. Garnish with parsley and serve.
