Roasted Sweet Potato Rounds with Honey & Feta Bliss
Ingredients

- 2 large Sweet Potatoes
- 2 tablespoons Olive Oil (Extra virgin recommended)
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Smoked Paprika (omit if preferred)
- 1 cup Feta Cheese (goat cheese can be substituted)
- 2 tablespoons Honey (maple syrup can be used)
- 2 tablespoons Parsley (freshly chopped)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into rounds.
- In a bowl, toss sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
- Spread the rounds on a baking sheet in a single layer.
- Bake for 25-30 minutes, flipping halfway through, until tender and golden.
- Remove from the oven and let cool slightly.
- Top with feta cheese, honey, and parsley before serving.
Notes
- Adjust seasonings to taste.
- Store leftovers in an airtight container in the refrigerator.
