Roasted Sweet Potato Rounds with Honey & Feta Bliss


Ingredients

  • 2 large Sweet Potatoes
  • 2 tablespoons Olive Oil (Extra virgin recommended)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika (omit if preferred)
  • 1 cup Feta Cheese (goat cheese can be substituted)
  • 2 tablespoons Honey (maple syrup can be used)
  • 2 tablespoons Parsley (freshly chopped)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds.
  3. In a bowl, toss sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
  4. Spread the rounds on a baking sheet in a single layer.
  5. Bake for 25-30 minutes, flipping halfway through, until tender and golden.
  6. Remove from the oven and let cool slightly.
  7. Top with feta cheese, honey, and parsley before serving.

Notes

  • Adjust seasonings to taste.
