Instructions
- Preheat your oven to 400°F (200°C).
- Wash and slice the sweet potatoes into 1/4-inch rounds.
- In a bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and cinnamon.
- Spread the rounds on a baking sheet in a single layer.
- Roast for 25-30 minutes, flipping halfway through.
- Drizzle honey over the roasted sweet potatoes.
- Top with crumbled feta cheese and chopped parsley before serving.
