Ingredients

  • ¼ cup honey
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice sweet potatoes into ¼-inch rounds.
  3. Toss rounds with olive oil, salt, pepper, and smoked paprika.
  4. Arrange in a single layer on a baking sheet.
  5. Roast for 20-25 minutes until tender.
  6. Remove from oven and top with feta cheese.
  7. Drizzle with honey and sprinkle parsley.
  8. Serve warm.
