Instructions
- Preheat oven to 400°F (200°C).
- Slice sweet potatoes into ¼-inch rounds.
- Toss rounds with olive oil, salt, pepper, and smoked paprika.
- Arrange in a single layer on a baking sheet.
- Roast for 20-25 minutes until tender.
- Remove from oven and top with feta cheese.
- Drizzle with honey and sprinkle parsley.
- Serve warm.
