Ingredients

  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1⁄2 teaspoon black pepper
  • 12 ounces pasta (such as spaghetti or penne)
  • 1 cup ricotta cheese
  • 1⁄2 cup grated Parmesan cheese
  • 1⁄4 cup fresh basil leaves, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F.
  2. Toss cherry tomatoes with olive oil, minced garlic, oregano, salt, and black pepper. Spread on a baking sheet.
  3. Roast tomatoes for 20 minutes until softened.
  4. Cook pasta according to package instructions. Drain and reserve 1⁄2 cup pasta water.
  5. In a large bowl, mix ricotta, Parmesan, and lemon juice.
  6. Add cooked pasta, roasted tomatoes, and reserved pasta water to the bowl. Stir gently.
  7. Garnish with fresh basil before serving.
