- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1⁄2 teaspoon black pepper
- 12 ounces pasta (such as spaghetti or penne)
- 1 cup ricotta cheese
- 1⁄2 cup grated Parmesan cheese
- 1⁄4 cup fresh basil leaves, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F.
- Toss cherry tomatoes with olive oil, minced garlic, oregano, salt, and black pepper. Spread on a baking sheet.
- Roast tomatoes for 20 minutes until softened.
- Cook pasta according to package instructions. Drain and reserve 1⁄2 cup pasta water.
- In a large bowl, mix ricotta, Parmesan, and lemon juice.
- Add cooked pasta, roasted tomatoes, and reserved pasta water to the bowl. Stir gently.
- Garnish with fresh basil before serving.
