Ingredients

- 2 lbs red potatoes, cubed
- 1/4 cup white vinegar
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp chopped fresh dill
- 1/4 cup finely chopped red onion
- 2 tbsp chopped chives
Instructions
- Boil the cubed potatoes in salted water until tender.
- Drain the potatoes and let them cool slightly.
- In a large bowl, whisk together vinegar, olive oil, salt, and pepper.
- Add the warm potatoes to the bowl and toss gently to coat.
- Stir in the dill, red onion, and chives.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For extra tang, add more vinegar to taste.
- This salad tastes best when chilled for a few hours.
- You can use fresh parsley if dill is unavailable.
