Description

A tangy and flavorful potato salad with a bold salt and vinegar taste.


Ingredients

  • 2 lbs red potatoes, cubed
  • 1/4 cup white vinegar
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh dill
  • 1/4 cup finely chopped red onion
  • 2 tbsp chopped chives

Instructions

  1. Boil the cubed potatoes in salted water until tender.
  2. Drain the potatoes and let them cool slightly.
  3. In a large bowl, whisk together vinegar, olive oil, salt, and pepper.
  4. Add the warm potatoes to the bowl and toss gently to coat.
  5. Stir in the dill, red onion, and chives.
  6. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • For extra tang, add more vinegar to taste.
  • This salad tastes best when chilled for a few hours.
  • You can use fresh parsley if dill is unavailable.
