- 1/3 cup coarse sugar (for rolling)
- 2 2/3 cups all-purpose flour
- Pumpkin filling
- 1/2 cup pumpkin purée
- 1/4 cup brown sugar
- 1 large egg
- Pinch table salt
- 1/4 tsp vanilla extract
- 1/4 cup whole milk
- 1/2 tsp pumpkin pie spice
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and cream cheese.
- Add both sugars, vanilla extract, and salt; mix well.
- Incorporate the egg yolk and pumpkin pie spice into the mixture.
- Gradually add the flour until a smooth dough forms.
- In another bowl, mix all the pumpkin filling ingredients until smooth.
- Form dough into balls and roll in coarse sugar.
- Place dough balls on a baking sheet, making an indentation in the center of each.
- Fill the indentation with pumpkin filling.
- Bake for 15-18 minutes or until the edges are lightly golden.
- Cool before serving.
Notes
- Use pure pumpkin purée, not pie filling.
- Ensure butter and cream cheese are at room temperature for easy mixing.
- Chill dough if it's too soft to handle.
