Smashed carrots are a simple and tasty side dish. They are flavorful and easy to prepare.
Ingredients

- 1 lb carrots, peeled and cut into thick rounds
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Boil carrots in salted water until tender, about 10-15 minutes.
- Drain the carrots and place them on a baking sheet.
- Use a fork or potato masher to gently smash each carrot.
- Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper.
- Bake for 20 minutes until edges are crispy.
- Remove from oven and sprinkle with Parmesan cheese and fresh parsley before serving.

- Can substitute Parmesan with nutritional yeast for a vegan option.
