Description

Smashed carrots are a simple and tasty side dish. They are flavorful and easy to prepare.


Ingredients

  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil carrots in salted water until tender, about 10-15 minutes.
  3. Drain the carrots and place them on a baking sheet.
  4. Use a fork or potato masher to gently smash each carrot.
  5. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper.
  6. Bake for 20 minutes until edges are crispy.
  7. Remove from oven and sprinkle with Parmesan cheese and fresh parsley before serving.
