Description

Smothered Chicken and Rice is a comforting dish featuring tender chicken thighs cooked in a flavorful sauce with rice.


Ingredients

  • 46 chicken thighs (bone-in or boneless)
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1 cup long-grain white rice
  • Optional: 1/2 cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with salt, pepper, paprika, and thyme.
  3. Add chicken to the skillet and brown on both sides, about 5-7 minutes per side.
  4. Remove chicken and set aside. In the same skillet, add diced onion and garlic and sauté until soft.
  5. Stir in flour and cook for 1 minute.
  6. Add chicken broth and bring to a simmer.
  7. Stir in rice and return chicken to the skillet.
  8. Cover and cook on low heat until rice is tender, about 20 minutes.
  9. If using, stir in heavy cream before serving.
  10. Garnish with fresh parsley and serve.

Notes

  • Adjust seasoning to your preference.
  • Use bone-in chicken for more flavor.
  • Rice can be substituted with brown rice but may require more cooking time.
