Description

Delicious strawberry cheesecake pancakes with a creamy filling and fresh strawberry topping.


Ingredients

  • 1¼ cups milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1½ cups fresh strawberries, chopped
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Instructions

  1. In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, combine milk, egg, melted butter, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. In a separate bowl, beat cream cheese, powdered sugar, vanilla extract, and milk until smooth.
  5. Heat a non-stick skillet over medium heat and pour batter to form pancakes.
  6. Cook until bubbles form, then flip and cook until golden.
  7. In a small bowl, mix strawberries, sugar, and lemon juice.
  8. Serve pancakes with cheesecake filling and strawberry topping.
