- 2 cups cooked, shredded chicken
- 4 cups corn kernels (fresh, canned, or frozen and thawed)
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 1/2 cups shredded mozzarella or Monterey Jack cheese (plus more for topping)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Optional: sliced jalapeños, hot sauce for extra kick
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, corn, cream cheese, sour cream, and mayonnaise.
- Add mozzarella or Monterey Jack cheese, Parmesan cheese, chili powder, paprika, garlic powder, salt, and pepper. Mix well.
- Stir in chopped cilantro and lime juice.
- Transfer the mixture to a greased baking dish.
- Top with additional cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Serve warm, with optional jalapeños and hot sauce.
