A hearty, comforting casserole with all the flavors of classic stuffed peppers—made easy in one dish with ground beef, bell peppers, rice, and melted cheese.

			- 1 pound ground beef
 - 1 onion (diced)
 - 1 green bell pepper (diced)
 - 1 red bell pepper (diced)
 - 1 can (14.5 oz diced tomatoes (with juices))
 - 1 cup cooked white rice
 - 1 cup shredded cheddar cheese
 - 1 teaspoon garlic powder
 - Salt and pepper to taste
 
Optional:
- 1/2 tsp Italian seasoning
 - 1/4 tsp crushed red pepper flakes
 - 1/2 cup corn kernels or black beans
 
Instructions
- Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
 - In a skillet, brown ground beef; drain excess fat.
 - Add onion and bell peppers; sauté 4–5 minutes.
 - Stir in tomatoes, rice, garlic powder, salt, pepper, and any optional ingredients. Simmer 5 minutes.
 - Spread mixture in baking dish. Top with cheddar.
 - Bake uncovered 15–20 minutes until cheese melts.
 - Let rest 5 minutes before serving.
