Description

Ingredients

  • 1 pound ground beef
  • 1 onion (diced)
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 1 can (14.5 oz diced tomatoes (with juices))
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Optional:

  • 1/2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup corn kernels or black beans

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a skillet, brown ground beef; drain excess fat.
  3. Add onion and bell peppers; sauté 4–5 minutes.
  4. Stir in tomatoes, rice, garlic powder, salt, pepper, and any optional ingredients. Simmer 5 minutes.
  5. Spread mixture in baking dish. Top with cheddar.
  6. Bake uncovered 15–20 minutes until cheese melts.
  7. Let rest 5 minutes before serving.
