- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup pineapple juice
- 1 can (8 oz) pineapple chunks, drained
- ½ cup soy sauce
- ½ cup brown sugar
- 3 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 1 red bell pepper, thinly sliced
- ½ teaspoon ground ginger
- Salt and pepper to taste
- Cooked rice for serving
- Green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Place the chicken in the crockpot.
- In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, and ground ginger.
- Pour the mixture over the chicken.
- Add pineapple chunks and red bell pepper on top.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- In a small bowl, mix cornstarch and cold water to create a slurry.
- Stir the slurry into the crockpot 30 minutes before serving to thicken the sauce.
- Serve the chicken over cooked rice and garnish with green onions and sesame seeds.
Notes
- Adjust sweetness by adding more or less brown sugar.
- Use chicken thighs for more flavor.
- Serve with steamed vegetables for a complete meal.
