Instructions
- Preheat oven to 400°F (200°C).
 - Toss sweet potato rounds with olive oil, salt, and black pepper.
 - Arrange on a baking sheet in a single layer.
 - Roast for 20-25 minutes until tender.
 - Top each round with brie, cranberries, and pecans.
 - Return to the oven for 5-7 minutes until brie melts.
 - Serve warm.
