Ingredients

  • 1 pound breakfast sausage
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste
  • 4 cups frozen tater tots
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Chopped fresh chives, for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cook sausage in a skillet over medium heat until browned. Remove and set aside.
  3. In the same skillet, melt butter and whisk in flour. Cook for 1 minute.
  4. Gradually whisk in milk until smooth. Cook until thickened, then season with salt and pepper.
  5. Spread tater tots in a baking dish. Bake for 20 minutes.
  6. Remove tater tots from oven and top with sausage, gravy, and cheese.
  7. Make wells in the mixture and crack eggs into them. Bake for 10-12 minutes until eggs are set.
  8. Garnish with chives if desired.

  • Use any type of sausage you prefer.
  • Adjust seasoning to taste.
  • For crispier tater tots, bake them longer before adding toppings.
