- 1 pound breakfast sausage
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups milk
- Salt and pepper to taste
- 4 cups frozen tater tots
- 4 large eggs
- 1 cup shredded cheddar cheese
- Chopped fresh chives, for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Cook sausage in a skillet over medium heat until browned. Remove and set aside.
- In the same skillet, melt butter and whisk in flour. Cook for 1 minute.
- Gradually whisk in milk until smooth. Cook until thickened, then season with salt and pepper.
- Spread tater tots in a baking dish. Bake for 20 minutes.
- Remove tater tots from oven and top with sausage, gravy, and cheese.
- Make wells in the mixture and crack eggs into them. Bake for 10-12 minutes until eggs are set.
- Garnish with chives if desired.
Notes
- Use any type of sausage you prefer.
- Adjust seasoning to taste.
- For crispier tater tots, bake them longer before adding toppings.
