- 1 chopped sweet onion
- 3 cups chicken stock
- 1 tsp sugar
- 2 tbsp butter
- 3/4 tsp coarse salt (such as Diamond Crystal kosher salt)
- 1 (11 oz) packet cheddar bay biscuit mix (Red Lobster brand)
- 2 tbsp butter (melted)
Instructions
- Prepare the soup base by sautéing onions in butter.
- Add flour, tomatoes, chicken stock, sugar, salt, and pepper.
- Simmer until flavors meld.
- Mix biscuit dough according to package instructions.
- Drop spoonfuls of dough onto the simmering soup.
- Cover and cook until dumplings are fluffy.
- Brush dumplings with melted butter before serving.
Notes
- Use undrained tomatoes for richer flavor.
- Adjust salt to taste if using a different brand.
