  • 3 cups chicken stock
  • 1 tsp sugar
  • 2 tbsp butter
  • 3/4 tsp coarse salt (such as Diamond Crystal kosher salt)
  • 1 (11 oz) packet cheddar bay biscuit mix (Red Lobster brand)
  • 2 tbsp butter (melted)

Instructions

  1. Prepare the soup base by sautéing onions in butter.
  2. Add flour, tomatoes, chicken stock, sugar, salt, and pepper.
  3. Simmer until flavors meld.
  4. Mix biscuit dough according to package instructions.
  5. Drop spoonfuls of dough onto the simmering soup.
  6. Cover and cook until dumplings are fluffy.
  7. Brush dumplings with melted butter before serving.
