Description
A hearty and comforting turkey and rice soup made with fresh vegetables, herbs, and shredded turkey breast.

- 3 tablespoons butter
- 1 large onion, diced
- 1 cup diced celery
- 1 cup diced carrots
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 3/4 cup rice
- 8 cups turkey stock
- 3 sprigs fresh thyme
- 1 tablespoon chopped fresh parsley
- 1 teaspoon poultry seasoning
- 1 bay leaf
- salt and pepper, to taste
- 3 cups cooked shredded turkey breast
- 1/4 cup heavy cream, optional
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, celery, and carrots. Cook until softened, about 5 minutes.
- Stir in garlic and cook for 30 seconds.
- Add flour and mix well to coat the vegetables.
- Pour in turkey stock and stir to combine.
- Add rice, thyme, parsley, poultry seasoning, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in shredded turkey and cook for 5 more minutes.
- Optional: Stir in heavy cream before serving.
Notes
- Use leftover turkey for best results.
- Adjust seasoning to your taste.
- For a thicker soup, simmer longer.
