Description

A hearty and comforting turkey and rice soup made with fresh vegetables, herbs, and shredded turkey breast.


Ingredients

  • 3 tablespoons butter
  • 1 large onion, diced
  • 1 cup diced celery
  • 1 cup diced carrots
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 3/4 cup rice
  • 8 cups turkey stock
  • 3 sprigs fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon poultry seasoning
  • 1 bay leaf
  • salt and pepper, to taste
  • 3 cups cooked shredded turkey breast
  • 1/4 cup heavy cream, optional

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, celery, and carrots. Cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 30 seconds.
  4. Add flour and mix well to coat the vegetables.
  5. Pour in turkey stock and stir to combine.
  6. Add rice, thyme, parsley, poultry seasoning, bay leaf, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes.
  8. Stir in shredded turkey and cook for 5 more minutes.
  9. Optional: Stir in heavy cream before serving.

Notes

  • Use leftover turkey for best results.
  • Adjust seasoning to your taste.
  • For a thicker soup, simmer longer.
