Ingredients

  • 1 package (3.4 oz) Vanilla instant pudding dry mix
  • 1 can (15 oz) pumpkin puree
  • 1 ¾ cup flour
  • 1 tablespoon baking powder
  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • ⅓ cup oil
  • 2 eggs
  • 1 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix pumpkin puree, oil, eggs, and sugar until smooth.
  3. Add flour, baking powder, pumpkin spice, baking soda, and vanilla pudding mix. Stir until combined.
  4. Pour batter into the prepared loaf pan.
  5. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool before slicing.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
  • Adjust sugar based on preference.
