- 1 package (3.4 oz) Vanilla instant pudding dry mix
- 1 can (15 oz) pumpkin puree
- 1 ¾ cup flour
- 1 tablespoon baking powder
- 1 tablespoon pumpkin spice
- 1 teaspoon baking soda
- ⅓ cup oil
- 2 eggs
- 1 cup sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix pumpkin puree, oil, eggs, and sugar until smooth.
- Add flour, baking powder, pumpkin spice, baking soda, and vanilla pudding mix. Stir until combined.
- Pour batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool before slicing.
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- Adjust sugar based on preference.
- Store leftovers in an airtight container.
