Description

    • 8 oz (226g) full-fat cream cheese, softened
    • sticks (168g) unsalted butter, softened
    • 2 cups (400g) granulated sugar
    • 6 large egg whites, room temperature
    • 3 cups (342g) cake flour
    • 2 tsp (8g) baking powder
    • ½ tsp (3g) baking soda
    • ½ tsp (3g) salt
    • 1 cup (242g) buttermilk
    • ¼ cup (54g) vegetable oil (canola preferred)
    • 2 tsp (8g) clear vanilla extract (or pure vanilla for depth)
  • For the Vanilla Buttercream:
    • 2 sticks (226g) unsalted butter, slightly softened
    • 6 cups (690g) powdered sugar
    • 2 tsp (8g) vanilla extract (clear for a whiter finish)
    • ⅓ cup (72g) milk or heavy cream (adjust to desired consistency)
    • ½ tsp (3g) salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a stand mixer, beat cream cheese and butter together until smooth and creamy.
  3. Gradually add the sugar, beating until light and fluffy.
  4. Add egg whites one at a time, mixing well after each addition.
  5. In a separate bowl, sift together cake flour, baking powder, baking soda, and salt.
  6. In another bowl, combine buttermilk, oil, and vanilla extract.
  7. Alternate adding the dry ingredients and the buttermilk mixture to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  8. Divide batter evenly between the prepared pans and smooth the tops.
  9. Bake for 28–32 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in pans for 10 minutes, then remove and cool completely on a wire rack.
  11. For the Vanilla Buttercream:
    • Beat butter on medium speed until smooth.
    • Gradually add powdered sugar, mixing on low until combined.
    • Add vanilla, salt, and milk or cream a little at a time, beating on medium-high until light and fluffy.
    • Frost cooled cake layers and decorate as desired.
