Ingredients

- 1 lb large shrimp peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 2 cups cooked rice white or brown
- 1 ripe avocado diced
- 1/2 cup cherry tomatoes halved
- 1/4 cup red onion thinly sliced
- 1/4 cup chopped cilantro
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup chopped cilantro
- 2 tbsp lime juice
- 1 tbsp water
- 1/4 tsp salt
- Pinch of black pepper
Instructions
- Heat olive oil in a pan over medium heat.
- Add shrimp, chili powder, cumin, garlic powder, salt, and pepper.
- Cook shrimp until pink and opaque, about 3-4 minutes.
- In a bowl, combine cooked rice, avocado, cherry tomatoes, red onion, and cilantro.
- In a separate bowl, mix sour cream, cilantro, lime juice, water, salt, and black pepper to make the sauce.
- Serve shrimp over the rice mixture and drizzle with cilantro lime sauce.
Notes
- Feel free to substitute brown rice for white rice.
- Adjust seasoning according to your taste.
- Use lime zest for extra flavor in the sauce.
