Description

A fresh and flavorful dish combining shrimp, avocado, and rice with a zesty sauce.


Ingredients

  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice white or brown
  • 1 ripe avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • 1 tbsp water
  • 1/4 tsp salt
  • Pinch of black pepper

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add shrimp, chili powder, cumin, garlic powder, salt, and pepper.
  3. Cook shrimp until pink and opaque, about 3-4 minutes.
  4. In a bowl, combine cooked rice, avocado, cherry tomatoes, red onion, and cilantro.
  5. In a separate bowl, mix sour cream, cilantro, lime juice, water, salt, and black pepper to make the sauce.
  6. Serve shrimp over the rice mixture and drizzle with cilantro lime sauce.

Notes

  • Feel free to substitute brown rice for white rice.
  • Adjust seasoning according to your taste.
  • Use lime zest for extra flavor in the sauce.
