Ingredients

- 2 cups cooked chicken, shredded or diced
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine chicken, black beans, corn, red bell pepper, cherry tomatoes, avocado, red onion, and cilantro.
- In a small bowl, mix Greek yogurt, mayonnaise, lime juice, chili powder, cumin, salt, and pepper.
- Pour dressing over the salad and toss gently to coat.
- Serve chilled and enjoy.
Notes
- Store leftovers in an airtight container in the fridge for up to 2 days.
- Add extra lime juice for more tang.
- Swap Greek yogurt with sour cream if preferred.
