Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chicken, black beans, corn, red bell pepper, cherry tomatoes, avocado, red onion, and cilantro.
  2. In a small bowl, mix Greek yogurt, mayonnaise, lime juice, chili powder, cumin, salt, and pepper.
  3. Pour dressing over the salad and toss gently to coat.
  4. Serve chilled and enjoy.
