- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or plain yogurt
- 1/4 cup milk
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Make the crumble topping: Mix flour, brown sugar, cinnamon, and nutmeg. Cut in cold butter until crumbly. Refrigerate until ready to use.
- Prepare the apple filling: Toss diced apples with sugar, lemon juice, cinnamon, nutmeg, and flour. Set aside.
- Make the cupcake batter: Whisk flour, baking powder, baking soda, and salt in a bowl. In another bowl, beat butter and sugar until creamy. Add eggs one at a time, then mix in vanilla, sour cream, and milk.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fill cupcake liners halfway with batter. Add a spoonful of apple filling, then top with more batter. Sprinkle crumble topping over each.
- Bake for 20-25 minutes, or until a toothpick comes out clean. Cool before serving.
