  • 2 large eggs

  • 1 ½ cups peeled and diced apples (about 2 medium apples)
  • ½ cup all-purpose flour (for streusel)
  • ⅓ cup brown sugar, packed (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 3 tablespoons unsalted butter, cold and cubed (for streusel)
  • ½ cup powdered sugar (optional glaze)
  • 12 tablespoons milk or cream (optional glaze)
  • ¼ teaspoon vanilla extract (optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat softened butter and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Gradually add dry ingredients to the wet mixture, mixing until just combined. Fold in diced apples.
  5. Pour batter into the prepared loaf pan.
  6. For the streusel, mix flour, brown sugar, and cinnamon. Cut in cold butter until crumbly. Sprinkle over the batter.
  7. Bake for 50–60 minutes or until a toothpick comes out clean.
  8. Let cool for 10 minutes in the pan, then transfer to a wire rack.
  9. For the glaze, whisk powdered sugar, milk, and vanilla. Drizzle over cooled bread.

  • Do not overmix the batter to keep the bread tender.
