Delicious Carrot Cake Cream Cheese Bars with a creamy swirl.


Ingredients

  • 1 cup light brown sugar
  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine light brown sugar, kosher salt, and vanilla extract.
  3. Add flour, cinnamon, nutmeg, baking powder, and mix well.
  4. In a separate bowl, beat the egg and melted butter.
  5. Stir the egg mixture into the flour mixture until combined.
  6. Fold in grated carrots.
  7. In another bowl, mix cream cheese, egg yolk, and granulated sugar until smooth.
  8. Spread the batter in a greased baking dish.
  9. Drop spoonfuls of cream cheese mixture on top and swirl with a knife.
  10. Bake for 25-30 minutes until set.
  11. Let cool before cutting into bars.
