- 1 cup light brown sugar
- 0.5 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon baking powder
- 1 large egg
- 0.5 cup unsalted butter
- 1 cup freshly grated carrots
- 4 ounces cream cheese (softened)
- 1 large egg yolk
- 0.5 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine light brown sugar, kosher salt, and vanilla extract.
- Add flour, cinnamon, nutmeg, baking powder, and mix well.
- In a separate bowl, beat the egg and melted butter.
- Stir the egg mixture into the flour mixture until combined.
- Fold in grated carrots.
- In another bowl, mix cream cheese, egg yolk, and granulated sugar until smooth.
- Spread the batter in a greased baking dish.
- Drop spoonfuls of cream cheese mixture on top and swirl with a knife.
- Bake for 25-30 minutes until set.
- Let cool before cutting into bars.
Notes
- Store leftovers in an airtight container.
- These bars taste better the next day.
- Feel free to add nuts for extra crunch.
