- 3 cups chilled mashed potatoes
- 1 large egg
- 1 cup shredded cheddar cheese
- Chopped chives, to taste
- Flour, as needed
- Garlic powder, to taste
- Salt, to taste
- Pepper, to taste
- Parmesan cheese, for coating
Instructions
- Preheat oven to 375°F (190°C).
- Mix mashed potatoes, egg, cheddar cheese, chives, garlic powder, salt, and pepper in a bowl.
- Form small balls from the mixture and roll them in flour.
- Coat each ball with Parmesan cheese.
- Place on a baking sheet and bake for 20-25 minutes until golden.
- Serve warm.
